Celery Root Soup with Oyster Mushrooms

Serves 6

Ingredients for Soup
5# celery root, peeled and chopped
1 small head celery leaves removed and chopped
1 onion, peeled and chopped
4 cloves garlic chopped
1 large Idaho potato peeled and chopped
3 bay leaves
2 gallons water
1/4 cp olive oil
salt and pepper to taste

Ingredients for Garnish
1.5 # cleaned oyster mushrooms
salt and pepper to taste

Method for Soup
1) In a large casserole dish, heat olive oil and add vegetables (except potato) and sweat (do not brown) about ten minutes on medium heat.
2) Add potato and water.
3) Bring to a boil and reduce heat
4) Cook about 40 minutes or until vegetables are soft.
5) Puree in blender until smooth, add the water if necessary.

Method for Mushrooms
1) In a large skillet, sauté mushrooms over high heat in two tablespoons of olive oil
2) Season with salt and pepper

To Serve
1) Put mushrooms in a soup bowl and pour hot soup over top.
